This morning when I connected up, I had car already running. I opened ECTune, selected connect to ostrich in the menu, then connect to datalog in the menu. all of the datalog menu items grayed out and the fuel maps/charts/everything went completely blank and grayed out. I couldn't tell it to stop datalogging so I closed out ECTune , unplugged and replugged the USB cables and opened ECTune again.. then everything worked fine.?

No, I couldn't reproduce yet.. the steps are same as I always do.. turn on laptop plug in both USB (only 2 ports available, plug in any order) load ECTune Emulator->Connect Datalogging->Connect I will try to check that the debug settings are enabled and if it happens again, will have better explanation.

debug in setting is just to debug the comm port connections and steps how it connects

Who knows... it could be a comm port/driver issue. I am using *gasp* PL2313 driver... I have a new FT232RL chip I need to make PCB for.. then things will be much better.
